Transparency refers to the ability of a dissolved gelatin solution or gel to transmit light, and it is an important indicator of gelatin purity and quality. Higher transparency indicates fewer impurities (such as insoluble particles, pigments, ash, etc.) and a more uniform molecular structure.

Molecular Structure Characteristics

 

Gelatin is obtained from the partial hydrolysis of collagen. Its molecular chains have a triple helix structure (partially retained) or a randomly coiled state. This structure allows light to pass through with lower scattering intensity, thus forming a transparent or translucent state.

Gelatin with a uniform molecular weight distribution and low impurity content is more likely to form highly transparent solutions or gels.

 

Influence of Solution State

  • Concentration: Low-concentration gelatin solutions (e.g., 1%-5%) are generally more transparent. Increasing the concentration may cause the solution to become cloudy (due to enhanced intermolecular interactions).
  • Temperature: Heating a dissolved gelatin solution results in higher transparency. After cooling and forming a gel, the transparency may decrease slightly (due to slight scattering caused by the ordered molecular arrangement).
  • pH value: Gelatin is most stable and has the highest transparency under neutral conditions (pH 5-7); acidic or alkaline environments may cause molecular hydrolysis or aggregation, reducing transparency.
